Recipe Corner

Wild Rice Casserole

1/2 cup wild rice or brown rice or combination
2 1/4 boiling water
1/2 cup long grain rice
3 tbsp. butter 1 cup onion, chopped
1 cup celery, sliced diagonally
1/2 pound mushrooms fresh or canned
1/4 cup soy sauce
7 oz. water chestnuts, canned and sliced
1/3 cup slivered almonds, toasted
3/4 cup dry bread crumbs
2 tbsp. butter, melted
Preheat oven to 3500. Add washed rice to boiling water. Cover, reduce heat and simmer 20 minutes longer.

Melt butter in frying pan over medium heat, saute onion, celery and mushrooms until tender. Combine with cooked rice, soy sauce and sliced water chestnuts. Spoon into 7-cup casserole dish.

Mix almonds with crumbs and melted butter. Sprinkle over rice mixture. Bake for 30 minutes.

Health & Wellness Information Fair

Look for us at the Health and Information Fair happening Tuesday, June 07th at the Royal Canadian Legion. This event is sponsored by the Community Policing Committee and is an opportunity to inform the Red Lake Community of the Services/Programs/Events available in our area.

Budgeting Course

This course is going well. You can always learn something new taking this course. New ways to save money, places that you can cut back and setting up a budget. We are learning to set up a ledger right now with headings and how to keep track of different items to see what the cost is and to see ways to cut back on some of these things. Eating Better For Less is another of the topics that we will be looking into.

Free Books

Don't forget that you can pick up books to read here at the Adult Learning Centre at no cost. We also accept books that you don't know what to do with. Books are expensive, so we try to do our part to help people to get reading material and to share with others. So do drop in and see if there is something that you would like to have.

Graduation

Graduation ceremonies are being held at the Red Lake District High School on Friday, June 24th, at 1:00 pm in the afternoon. Congratulations to all the Graduates on a job well done and Good Luck in your future endeavours.
