Recipe Corner

Simply Sensational Blueberry Cake

Mix this up in one bowl. It couldn’t be easier and it tastes great!

2 cups flour
3/4 cup sugar
2 tsp. baking powder
½ tsp salt
2 eggs
½ cup milk
1/3 cup butter or margarine, melted
1 tsp lemon rind, grated
1 tbsp. lemon juice
2 cups blueberries
2 tbsp. sugar
1/4 cup sliced almonds

  1. In a large bowl, combine flour, sugar, baking powder, salt, eggs, milk, melted butter, lemon rind and lemon juice. Beat with an electric mixer on low speed until all ingredients are moistened, then beat at medium speed for 2 minutes.
  2. Stir in 1 cup (250ml) of blueberries.
  3. Spread the batter evenly in a greased 9" square baking pan.
  4. Sprinkle the remaining blueberries on top, then sprinkle with 2 tbsp. (30 ml) of sugar and the almonds.
  5. Bake at 350 F (180 C) for 55 to 65 minutes, or until a cake tester inserted in the center comes out clean.
  6. Cool the cake on a rack and serve warm or cool. SERVES 9
